Apple switched to HEIC with iOS 11 (2017) because HEIC stores photos at roughly the same visual quality as JPEG but in half the file size. This saves storage on your device and in iCloud. You can disable it in Settings > Camera > Formats > Most Compatible, but this doubles your storage usage per photo.
At JPEG quality 85–95%, the difference is invisible in normal photography. JPEG does discard some data the human eye cannot detect. If you need zero quality loss (for professional editing), convert to PNG instead. For everyday sharing and viewing, JPEG at high quality is perfect.
